Summer Corn Salad

Hot and busy are the two words that I would use to describe this summer.  I hear life slows down as the temperature goes up, but so far it hasn’t happened.  A packed calendar of weddings, family reunions, birthday parties, work, and all those wonderful activities that are just more fun in the sun has left me a little weary.  I’ve become nostalgic for a summer of lazy afternoons on a shady porch with a cool glass of lemonade.  And in the meantime, having had no success at simplifying life, I’ve decided to simplify my cooking.  Fortunately, summer produce makes this easy.

Upside-Down Cherry Almond Cake


Last summer I fell in love with a recipe in the August issue of Bon Appétit for a Peach and Pecan Upside-Down Cake.  And oh, was it good.  I made it for the 4th of July and then a couple of days later baked another one that I transported to a family reunion.  The peaches baked in brown sugar and butter were perfectly tender and the pecans added a great nutty taste as well as the a bit of crunch. It was a cake that made you want to turn on your oven when it was 100 degrees outside; a cake that lacked pretension, but was still far from ordinary.

7-Layer Bars

We’ve all tried to ignore it.  As we make our way down a buffet line, heaping our plates with creamy macaroni and cheese, crisp cole slaw, and decadent brownies, we try not to make eye contact with that one dish.  You know what I’m talking about.  Maybe it’s a Jello concoction gone terribly wrong or some sort of cheese casserole (is that broccoli?) that sits untouched, but there is one at every potluck.  You do your best to pretend not to see it or if your bold, you remark to the guy behind you: “Gosh, that looks delicious, but I just don’t have room on my plate.”  In your mind, you’re thanking God that you didn’t bring that dish and then with a furtive glance down the table, you note  with great satisfaction (and relief) that your tuna casserole is being eaten with gusto.
